
IIE DIGITAL: When rain clouds gather, every region has a signature comfort dish that brings warmth to the table. In Kerala, that role is beautifully filled by Vegetable Ishtu, a delicate coconut milk stew that has been a household favourite for generations.
Unlike heavily spiced curries, Vegetable Ishtu is known for its gentle flavours and silky texture. Made with fresh seasonal vegetables and creamy coconut milk, the dish is both nourishing and satisfying. It is most commonly paired with soft appam or idiyappam, creating a meal that is simple yet deeply comforting.
The recipe begins by heating coconut oil and tempering it with whole spices such as cinnamon, cloves and green cardamom. Curry leaves, green chillies and sliced onions are lightly sautéed before vegetables like potatoes, carrots and beans are added. The mixture is then slowly cooked in coconut milk over a gentle flame, allowing the vegetables to become tender while absorbing the subtle flavours. Just before serving, a drizzle of fresh coconut oil and a handful of curry leaves enhance the stew's aroma.
